Level 16 Yamame ain't gonna carry you through Brock. Five more levels across the whole team were necessary. Grind grind grind... Unstable equilibrium. And I ground 3 in-game hours in Mt. Moon for this? Okay, I still won, but just how high a level am I expected to be? Argh, I'm so tired, it's like that's all there is to Touhoumon, even the easier Blue Version. I'm also convinced that "there's no way to play a video game wrong" is nonsense.

Your main problem is having a full team for the first two badges. That's a huge no, there aren't as many trainers, the wild critters don't give a lot of exp and you have no way to battle the trainers again at that point. So yes, of course you're going to grind because you decided to catch a full team.
Pokemon 101: 2 to 3 Pokemon(or Touhoumon) at most is ideal for the first two badges.

Tell me how am I supposed to know which mons am I supposed to catch and use when I'm playing a game blind. Catch your favorites/the ones that appeal to you the most. If you end up with more than two or three box the rest.

This makes no sense when XP gained goes up linear-ish, but XP required for levelup is cubic.
i.e. late game sees slowed growths overall that increased XP gains do nothing to help.

You're going from "fast" to "very slow" growth. I'm going from "slow" to "very slow" so it's less of a shock.

I'm going from "slow" to "very slow" so it's less of a shock. You do it because it'll make grinding a little faster when you catch a new critter. By the time growth slows down it won't matter much.
