Because the old topic is kind of outdated and dead, here's where you say your thoughts on all the games. My list is drastically different since playing all the Windows games and 1ccing them all (except PoFV and the PC-98s but who cares) on Normal, and even 1ccing them all but EoSD and DDC on Hard, so here goes:
Amazing
Undefined Fantastic Object: EoSD was the first game I played, but I couldn't get into it. At first, I couldn't get into MoF or SA very much, either. And then I played this. Sanae being playable helped me a LOT, and I vowed that I would 1cc this game on Easy. I reached my goal and then decided to perfect my skills on Easy before moving onto Normal. Soon this game became my first Normal 1cc, as well, and from that point I knew I could venture to the other Normals. I just have a lot of fond memories of this game, and I'm glad that I was able to get way into the series after playing it. The music is awesome, the stage backgrounds are really cool, the cast is very interesting, and it provides quite a bit of challenge. Probably wouldn't be as big a Touhou fan as I am now if it weren't for good 'ol UFO. Glad to have finally 1cced it on Hard.
Mountain of Faith: Wow, this game is really fun. The only game in the series that I 1cced Normal with over 25 times (wow), and it even became the first game I 1cced a Hard mode and cleared an Extra stage in respectively. It's really addicting for sure. The soundtrack is my favorite in the series, the cast is really memorable (Sanae~), and it's just overall fun. My only gripe is that there's no graze.
Great
Perfect Cherry Blossom: I used to hate this game for the longest time and refused to play it. But once I got back to it to 1cc its Normal mode, I realized how much fun it really is. The cherry border system is intriguing, the music is of course awesome, the cast is great (especially Yuyuko because fuck yes), and it overall just feels like a great improvement to EoSD.
Subterranean Animism: Fun fun fun. I really liked the team-up system here (even more than IN's due to the variety), and this game has my favorite story in the series due to how I think the dynamic between the characters was quite well-written. Cast is memorable, music is really good, and going through the game felt quite engaging. But wow...what a difficult game. I only 1cced Normal to see Sanae in the Extra stage, but holy wow, it was tough. Very tough.
Good
Ten Desires: The second shooter in which Sanae is playable~ It's certainly a good game, though the stinginess of resources, how repetitive some of the music is, and how less grand this game feels after MoF, SA, and UFO means I don't really like it as much as I thought I would at first. But like I said, it's good.
Imperishable Night: Really easy to get into, which is quite awesome. Teams were cool, music was great, cast is certainly memorable, and I liked the time system. I wasn't quite blown away, though, and don't find it great, or anything. The game was just good. Eirin > Kaguya every time.
Not Bad
Double Dealing Character: RESOURCES FOR DAYS. YEAH. The auto-collecting system is fun. I just don't like this game as much as the others. Dunno why.
Embodiment of the Scarlet Devil: Certainly a fitting start to the Windows games. The engine, however, is definitely outdated. And unlike PCB, which has way more fun gameplay, I can't imagine playing this very often.
Phantasmagoria of Flower View: Haven't played. I can see why people like it, though.

Hisoutensoku: Sanae~ Enough said.
Urban Legend in Limbo: C'mon full release.
Scarlet Weather Rhapsody: Why play this when Hisoutensoku exists?
Hopeless Masquerade: Haven't played. Doubt I will.
