Below is an item count for SA. Since not all items are collected, and different items are collected for each shot, I have specifically counted items only for the Easy Reimu A route. I've also coloured in values wherever I think other characters should collect different amounts of items, but I can't guarantee that I didn't miss any. For Normal-Lunatic, there are probably many more differences.
You should use this chart to estimate how many points an increase in PIV will earn you, for comparing strats or evaluating the risk/reward of a trick. Just as a reminder, PIV in SA is
Base PIV * (Communication strength + Graze/10000)
So it depends on 3 variables. You can usually assume that the communication strength will always be 1, but you'll have to guess what one variable will be on average to calculate the gain from the other variable. Since you can accurately guess your average PIV on Easy, calculations will be most accurate at assessing score gains from grazing on Easy. For other calculations, you can at least find the median very easily with this chart. Don't know if that makes much sense but the following examples should make it clearer.
Examples:
I want to work out how much I gain from a 100 graze improvement on Yamame's last spell. First, I guess that my average PIV will be 49000. Therefore score increase = 2174 * 49000 * (100/10000) = 1,065,260
Now I want to know the cost of dropping a green item (100 PIV) in stage 1, during the second boulder. Since guessing my average graze is difficult, I use the median, which occurs at item number: 80 + (1231 - 80)/2 = 655.5 (Note that I reach max PIV on Orin 2, so it's the median between then and the boulder). By the time I reach item 656 my graze is about 14500. Score loss = (1231 - 80) * 100 * (1 + 14500/10000) = 281,995

Trivia:
Every boss gives you 8 items upon defeat, except for Okuu.
Orin's third non-spell drops 5 items.
More than a third of SA's total items are in stage 5.
