I find I like the touhou games which style of damnaku rely on dense patterns so probably why I like MOF and Subterranean Animism so much. Although I guess DDC is pretty reflex based so I dunno

I've only played like 6 games so far so I may as well order them top to bottom.

To be honest, PCB is the only one that feels particularly behind to me. DDC and MoF have their moments of amazingness but also vast tracks of zzzzz.

Undefined Fantastic Object: Great replayability considering how interesting the UFO mechanic is, said system is well-implemented and fun to play around with in self-challenges, cast is great, the music fits very well with the atmosphere in each stage, and Sanae is playable. Epitome of perfection, and I hope to see another Touhou game like this.

Hisoutensoku: Yay for Sanae~ Second to MoF in having the best OST. The gameplay is really good and addicting, the cast is even better than it was in SWR with the additional characters, and it's just a joy to play.
Imperishable Night: Only game in the series I 1cced in a night (how fitting). It was that fun to play. And there's still more in this game I have to discover. But I'm lazy/focusing on other things.
Embodiment of the Scarlet Devil: Simple and engaging. Nothing is too ridiculous, and nothing is too bland. I really like it for those reasons.

Nearly everything else: Honorable mentions to Ten Desires and Double Dealing Character.

Mountain of Faith: Definitely has the best OST in the serious. Also Sanae's debut~ Still, I don't like spamming bombs, I don't like how there's no graze, and I don't like the scoring system. And yet, I play this game a lot. Sanae keeps roping me back in. >_>

WHAT THE FUCK IS THIS
Subterranean Animism: Sanae appearing as the EX Midboss, the very memorable and great cast (Parsee, Rin, Utsuho, the satories, etc.), and the engaging music are the only good things about this game. Everything else makes me see red.

Ok since people are being more specific...

Imperishable Night - By far the best made Touhou game so far. Great sound track, a bit on the easy side, but who cares. Being easy doesn't mean it's any less fun. The introduction of Last Words, which were really cool. Kaguya. Yes Kaguya. Two character play system, the storyline... It's a really great game.

Mountain of Faith - I honestly find much of the hate on this game unfounded. Now I'm not much of a danmaku guy, but the game system is honestly good to me. Shot-types aren't really boring. Yeah, there isn't a graze system, but I don't think it was really that important to this type of game. One thing I didn't like was the whole unique spellcard (bomb) system wasn't in this game, but it's honestly fine. It has this high-risk high-reward feel to the game. Also Mountain of Faith probably has the best soundtrack in the entire Touhou series. Great Autumn-like feel and background.

Hisoutensoku - This fighting game. It's the best Touhou fighting game in the series. Although it's literally just SWR2, they added on upon the SWR system and made this better. A nice and diverse roster of characters, an overall nice game. Albeit, the game has some obviously bias and unbalanced-ness and many things that should have been polished better... (Obviously Sakuya bias is obvious, needs better hitboxes, many skillcards just plain suck, etc) They at least got the basics of a fighting game down to the tee. There is no 10-0 MUs the worst MU (matchup) in this game is Sakuya vs Alice (7-3) and that isn't even that bad. It's still very much winnable for Alice. So yeah, Hisoutensoku is a good game.

Embodiment of the Scarlet Devil - This is the first Touhou game I have ever played. Very nice music in this game. Albeit the hitboxes in the game need some help (THE CLIPS MAN), it's an overall nice game. Also, the situational difficulty mechanic makes this game pretty challenging if you're doing well. (I wonder why no other Touhou game has this).

Lotus Land Story - I really like the way the game progressed. Also Yuuka. Great soundtrack. Although it's a pretty old game, it's very much fun. And don't forget the most challenging spellcard in the entire Touhou series... Gengetsu Rape Time

Highly Responsive to Prayers - It isn't easy at first, but once you get it can be pretty fun. Some bosses on this game are pretty mean... (looks at Mima, Sariel, and Konngara). but it doesn't matter. The very first Touhou game is nice.

Phantasmagoria - These games are fun. The 2 player view point thing really makes you think about how danmaku battles really go in the Touhou series. Although around the final bosses their dodging skills can get pretty stupid, it's worth the challenge. Hehe. I'm just wishing for the third Phantasmagoria, ZUN PLS.

Subterranean Animism - This game takes much of the mistakes MoF had and made it better. Strictly speaking SA is a better game than MoF, but I like MoF more. Great music and memorable characters, also a pretty nice storyline. One of the best in the series, imo. (Le Koishi).

Hopeless Masquerade - I had forgetten to mention this game in my previous post. I honestly didn't like this game so much. When the game was released it was unfinished, which was a big disappointed. It also came with some pretty stupid glitches too. (Game crashing at the end of Koishi's story.) As a game, it's fun. No denying that. The innovative ideas put into this game were great. They really came up with some nice gimmicks. But as far as the basics of a fighting game, they botched it completely. I understand them trying to make the game more Touhou-like, but they could have done it in a way without botching how a fighting game is. At least have the ability to fight on the ground AND in the air, not purely in the air. Or simply made the air-combat system better. It's great game for fun, but as a fighting game, it's broken.
